ASIAN CHICKEN SOUP

Ingredients:

2 cans reduced-sodium chicken broth
1 tbsp grated ginger
garlic clove,silvered
1/2 tsp red pepper flakes
4 ounces soba noodles or whole-wheat spaghetti
1 boneless,skinless chicken breast halves,thinly sliced crosswise
1 medium celery stalks,cut into bite size pieces
1 cup snow peas,sliced into 1/2 inch on the diagonal
1 tbsp fresh lime juice
1 scallions,thinly sliced
salt
parsely

Method:

In a large saucepan,bring broth,ginger,garlic,red-pepper flakes,and 2 cups of water to biol overhigh heat.

Add noodles,lower heat,and simmer until noodles are tender,6 to 8 minutes

Add chicken,celery stalks ,and snow peas;cook until chicken is opaque throughout,about 1minute.

Add lime juice,scallions, parsely and salt to taste.
