Corn Fritters

3 corn cobs
1 garlic clove, crushed
1 fresh red or green chilli, seeded and finely chopped
a small bunch of fresh coriander, chopped
1 spring onion, finely chopped
1 tbsp soy sauce
3/4 cup rice or plain flour
2 eggs, lightly beaten
4 tbsp water
oil, for shallow frying
salt and pepper powder to taste


Using a sharp knife, slice the kernels from the cob. Rinse the corn kernels.
Add the garlic, chopped coriander, chilli, spring onion, soy sauce, flour, eggs, salt, pepper and water to the corn and mix well. The mixture should be firm enough to hold its shape, but not stiff.
Heat oil in a large frying pan. Add spoonfuls of the corn mixture, gently spreading each one with the back of the spoon to make a round shape. Cook for 1-2 minutes on each side.
Serve hot with any kind of sauce you like.
