Yam & Potatoes in Coconut Gravy

    Yams are high in Vitamin C, dietary fiber, Vitamin B6, potassium, and manganese; while being low in saturated fat and sodium. Vitamin C, dietary fiber and Vitamin B6 may all promote good health. Furthermore, a product that is high in potassium and low in sodium is likely to produce a good potassium-sodium balance in the human body, and so protect against osteoporosis and heart disease. Having a low level of saturated fat is also helpful for protection against heart disease. [ source : Wikipedia ]. This is a simple gravy made with coconut milk.

Now to the recipe,

You Need:

Yam - 1/2 cup [skinned & boiled ]
Potatoes - 1/2 cup [ boiled ]
Ginger paste - 1 tbs
cumin seeds - 1 tbs
cumin powder - 2 tbs
chilli powder - 1 tbs
Green chillies - 3, slit in to halves
Turmeric powder - 1 tsp
sugar - 1tsp
garam masala - 1 tsp
coconut milk -1 cup
ghee - 1tsp 


Marinade the yam and potatoes in turmeric powder, let it sit for 5-10 minutes.
Meanwhile in a microwave safe bowl, heat oil for about 3-4 minutes on high.
Add sugar and cuminseeds and microwave on high for 1 minute.
Add gingerpaste, chillipowder and cumin powder and microwave on high for 2 minutes, stirring in intervals.
Mix in the yam, potatoes and green chillies and microwave on high for 5 minutes, stirring in intervals.
Add the coconut milk, and microwave high for 2 minutes, till it comes to a boil.
Add in the salt, mix well and microwave on high for 1 minute.
Add in the garammasala and ghee, mix well.
Garnish with coriander and serve.


Any kind of vegetables can be used.
Tamarind juice can also be added.
