Mutton Fry
7:26 PMThe weather is very dull and depressive for the past few days. There has been storm warning everywhere and it has been raining heavily. Nothing much happening in the kitchen since last week because of the weather. It feels so good to be under the warm covers the whole day with something hot and spicy to munch on...
This mutton dish is such an spicy dish that feels good for the cold weather.
Ingredients:
1 lb Mutton / Goat meat, cut into small cubes
1 Small Onion
2 Tomatoes
2 green chilies
1 tsp cumin powder
2 tsp pepper powder
1 tbs coriander powder
1 tsp turmeric powder
2 tbs garlic, finely chopped
2 tbs ginger, finely chopped
1 cup diluted coconut milk
1 bayleaf
2 cloves
2 tbs coconut oil
Coriander leaves
salt, to taste
Method:
1. Grind onions, ginger, garlic, tomatoes and green chilies to a fine paste.
2. Heat oil in a pressure cooker. Add the bayleaf and cloves and cook for 20 seconds.
3. Add in the ground paste and cook for 5 minutes or until the oil seperates.
4. Add in the cumin powder, turmeric powder, and coriander powder. Mix well.
5. Add the mutton pieces and stir well to coat the spices. Add the coconut milk to the mutton mixer and mix.
6. Check for salt.close the lid and leave upto 5 whistles.
7. When the pressure is released, open the lid and add in the pepper powder and coriander leaves.
8. Cook it for another 5 to 7 minutes until the water evaporates and becomes dry.
9. Serve hot with rice or roti.
